Ingredients list
- 1 big jacket potato
- 1 broccoli
- 1 conference pear
- 1 tablespoon oil (Preferably coconut, flaxseed or olive oil of high quality)
- 1½ teaspoon lemon juice
- 30 g Butterbeans or white beans (Can be omitted)
Preparation
Soak the beans for min 24 hrs. in plenty of water. Pour of the water and boil them in approx. 60 min until they are tender.
Step 1
Peel the potato and pear, and cut these into smaller pieces. Remove the florets from the stalk on the broccoli and peel the stalk.
Step 2
Boil potato, pear and broccoli stalk in plenty of water. When the potato is tender, sift the liquid (save this).
Step 3
Boil water in a separate pot and add the florets when the water is boiling. Leave them in for 3 minutes and let them cool afterwards.
Step 4
Sift the beans (No need to save the liquid).
Step 5
Blend potato, pear, broccoli (both stalk and florets), beans and add 1½-2 dl of the saved liquid.
Step 6
During blending add oil and lemon juice. Blend until you have desired consistency.
