Potato, banana & prune puree

Ingredients list

  • 1 Jacket potato
  • 1 Ripe banana
  • 4-5 Prunes
  • ¼ Teaspoon vanilla powder
  • 1 Tablespoon oil (Preferably coconut, flaxseed or olive oil of high quality)
  • 1 Teaspoon lemon juice
  • 30g Azuki or kidney beans (Can be omitted)
Preparation

Soak the beans for min 24 hrs. in plenty of water. Pour of the water and boil them in approx. 60 min until they are tender.

Step 1

Peel the potato and cut into smaller pieces. Halve the prunes.

Step 2

Boil potato and prunes in plenty of water. When the potato is tender, sift the liquid (save this).

Step 3

Sift the beans (No need to save the liquid).

Step 4

Blend the potatoes and the prunes with beans, peeled banana, and 1½-2 dl of the saved liquid from the potatoes and prunes.

Step 5

During blending add oil, vanilla powder, and lemon juice. Blend until you have desired consistency.
